Introducing Churrasco: Piccanya

Hello! We are Shuhaskaria Kibon, a restaurant specializing in churrasco and Brazilian cuisine located in Shin Tora Dori CORE, a new landmark in Tokyo, a 6-minute walk from Shinbashi Station. This is a rare part of the meat that allows you to enjoy the delicious taste of lean beef and moist tenderness at the same time. Piccagna is the outer part of the rump, a large piece of meat (5 to 6 kg) that is removed when it is cut. When removed, it is shaped like a baseball home base. The fascia and excess meat is removed and cut into blocks, and the fat portion is adjusted as if it were on a skewer. Then, the meat is folded over the skewer, and the result is the beautiful piccagna you see here! The fat on the left side of the photo is melted, and the beef fat, which is the source of the beef's flavor, is blended into the entire lean part of the meat, making it even more delicious. It is truly a coating of flavor. This is the true essence of churrasco that cannot be achieved with steak!
